Greg Koch is a really interesting individual. This is a great blog post on him that I truly enjoyed and learned from. I'm writing a piece on him a two other California brewers for my beer coupons and this has been insightful.
Thanks.
Cheers, Mate!

I followed your Berliner Weisse recipe with a few changes: upped the Pilsner and White Wheat by a pound each, used White Labs lacto and European yeast. After one month in the bottle, I sampled it and it's completely still, wonderful yeasty aroma, pleasant lemony sourness and lemonade color. Any suggestions for a fix? More patience or an intervention? Even with this carbonation issue, the No Boil method is something that I'll definitely try again. Thanks.

I love the dunkels. I love Cascadian Ales/Black IPAs.
I wonder: is there a happy medium?
An unusually hoppy dunkel with some malt/yeast nods from the San Diego IPA scene?

I'd like to try to make one...

Full disclosure: I'm very inexperienced. Perhaps it's nothing but a pipe dream.

I find this beer extremely sweet... and also very hoppy. Personally, I like the juxtaposition. On draft you can't taste the alcohol. Definitely not one dimensional.

I made this recipe a month back with spent grain from a batch of porter. Soooooo good, best sandwich bread I have had in ... probably forever. I am currently baking some more loaves with some of that same grain (i froze some) to bring to Thanksgiving dinner along with the porter. Pretty pumped! I may attempt to make it into dinner rolls rather than bread - I will likely follow up if I try that and it works out well :p

I know this is an old post, but I wanted to thank you for this fabulous recipe. I baked two loaves as advised by a few commenters, subbed cider syrup for the honey and a little whole wheat for some of the flour and left the spent grains whole, and have to say this just might be the best sandwich bread I've ever had. Thanks again for sharing it, it's a definite keeper.

Enjoy reading about all the beers and beer stories this blog reports on. We are in the planning stages for a new brewery in Northeastern USA called Nor'easter Brewing Company LLC and our business plan is to grow to over 25,000BBL within 5 years.
The breweries you report on, allow for much encouragement.
