		<description><![CDATA[OK with red meat, but almost too similar in the sweet category given the glaze. I actually thought the Honey Crisp held up best to the aspic in that dish...something about the sharp flavor of the horseradish complemented by the citric spice and yeastiness.

Yeah, they seem big on the whole &quot;enjoy over ice&quot; thing, which I agree, is OK for some things but when I really want to taste something it&#039;s not the way to go (god forbid you mess up a scotch that way).]]></description>

		<description><![CDATA[I&#039;m with you Cap&#039;n.  I tried the honey crisp at Indulge and really liked it (in a very un-cidery sort of way).  I think you could do some real damage cooking with it.  Using it as a glaze for buffalo is kind of strange, cider already pairs so well with pork.  How did it hold up to red meat?

As for the light and regular varieties, I think they&#039;re pretty marginal.  They&#039;re better than a lot of American commercial ciders, but not quite as good as standard English varieties.  One thing I don&#039;t understand is serving any cider over ice.  I think we drink things too cold in general, but pouring a flavorful 3-20% abv beverage of any kind over ice seems like a waste.]]></description>
